  • 1 Cup All purpose flour
  • ¾ Cup Cake flour
  • ¼ Almond flour
  • (you can use 2 Cups of AP or other flour if you have it)
  • 2 Tsp. Baking Powder
  • 1 Tsp. Baking soda
  • 1 Tsp. Salt
  • 1 Tsp Ground cinnamon
  • ½ Tsp. Nutmeg
  • ½ Tsp. Vanilla powder
  • 1½ Cups. Sugar
  • 4 Tbs. Butter, melted
  • 2 Egg whites
  • 2 Larges eggs at room temperature
  • 2 Cups Medium Bananas, mashed or pureed
  • 1 Cup Heavy whipping cream, whipped to soft peak stage
  • 1 Tsp. Vanilla
  • ½ Cup Chocolate chips
  • 1 Cup Strawberries, cut into ½ inch cubes
  1. Butter a 9 x 13 or two 9 x 9 cake pans or line muffin tins with liners
  2. In a large bowl, combine the flours, baking powder, baking soda, salt, and spices together with a dry whisk.
  3. Add sugar and whisk again. Set bowl aside.
  4. In a separate bowl, combine the butter, egg white, egg, banana, whipped cream & vanilla.
  5. Make a well in the center of the flour mixture and add the wet ingredients.
  6. With a rubber spatula or spoon fold the ingredients together until not completely mixed together. Add the strawberries and chocolate chips, gently folding in until all ingredients are combined. Do not over mix, batter may be lumpy, it's ok.
  7. Pour mixture into prepared pans (for muffins fill to just below the rim for nice full tops that don't overflow)
  8. Optionally muffin tops liberally with a combination of fine sugar and large crystal sugar.
  9. Bake for 35-40 mins or until knife inserted comes out clean.
Note: This is a double batch, cut all ingredients in ½ for less.
Another Note: Why cut the recipe in ½ when you can store them in the freezer for quick access.
