Bacon Spinach Pasta & Cheese

Layers of spinach and bacon hide under a bed of pasta, cheese and onions. Baked to golden brown deliciousness. Recipe by:

  • 2 Cups Any pasta of choice, cooked to package directions, al dente
  • ¼ Cups Butter
  • ¼ Cups All-purpose flour
  • ½ Cup heavy cream
  • 1½ Cup milk
  • ½ Teaspoon Salt
  • 1 Teaspoon Pepper
  • ¼ Teaspoon Paprika
  • 1½ Cup Cheddar cheese, grated.
  • ½ Cup Swiss, grated
  • 5 Slices Bacon
  • ½ Medium onion, diced
  • 1 Cup Fresh spinach
  • ⅛ Cup Parmesan cheese
  • ½ C. Panko bread crumbs
  1. Preheat over to 350
  2. Cook pasta to al dente, slightly firm, drain, mix with a little oil and set aside.
  3. Cook bacon to crispy, drain grease and chop coarsely, set aside.
  4. In a saucepan on medium heat melt butter then add flour and spices to make a roux.
  5. Add cream and milk and bring to a simmer.
  6. Add cheeses and stir constantly until cheese is completely melted, if needed add more milk or cheese until sauce is thick but runs off spoon.
  7. Stir in pasta and onion, combine well.
  8. In caserole dish layer spinach on the bottom of the pan then top with bacon, leaving 2 tablespoons of bacon aside..
  9. Spoon pasta over the bacon.
  10. In a small bowl combine breadcrumbs and parmesan and sprinkle over pasta.
  11. Top dish with remaining bacon and bake uncovered in oven for 25 minutes or until golden brown.
