Sweet Peach And Soy Pork

  • 2 medium to large peaches
  • 1½ teaspoons Parsley
  • 3 teaspoons Apple cider vinegar
  • 1½ - 2 tablespoons spiced rum (or run with a little vanilla and nutmeg)
  • 3 tablespoons Brown sugar
  • 1½ tablespoons honey
  • 1½ tablespoons soy sauce
  • dash of salt & pepper
  • 4 servings of 6 ounces of pork (chops, loins, ribs etc)
  1. Cut both peaches into thumb sized cubes.
  2. Set one cut peach aside.
  3. Puree the second peach until smooth
  4. Combine all ingredients into a bowl and mix well.
  5. Place pork in a shallow pan and pour sauce over meat. Marinate for a minimum of 30 minutes.
  6. Heat a medium skillet with olive oil or butter on medium heat.
  7. Add pork to pan and season with salt and pepper.
  8. Cook pork to doneness based on pork thickness, basting regularly with sauce.
  9. Once cooked, remove pork from plate and set aside.
  10. Lower heat and add remaining sauce and second peach.
  11. Simmer for 5 minutes.
  12. Plate pork and top with peach sauce.
  13. Serve
