Peppermint Snowball Cookies

Peppermint brings a cool shiver of winter to this classic holiday cookie.

  • 1 cup Unsalted butter
  • ½ cup Powdered sugar
  • 1 teaspoon Peppermint extract
  • 1 teaspoon Vanilla extract
  • 2¼ cup All Purpose Flour
  • ½ teaspoon Salt
  • ⅓ cup Chopped pecans
  • 20 Peppermint candies or 3-4 Candy canes
  • ¾ cup Powdered sugar
  1. Heat over to 350.
  2. In large mixing bowl, beat the butter until light and fluffy.
  3. Slowly add ½ cup of powdered sugar & both extracts and combine well on low-medium.
  4. Add the flour, salt and pecans, mix well.
  5. Place the dough in the refrigerator and allow to chill for 20 minutes. Do not over chill or will become hard to work with.
  6. Roll dough into 1 inch balls and place on a buttered cookie sheet about an inch apart. They will not expand much at all.
  7. Bake for 20 minutes or until golden brown. Remove and allow to cool for 5-10 minutes.
  8. In the meantime add peppermint candies to a food processor and grind to fine sugar powder.
  9. Add peppermint powder and reamining powdered sugar into two separate bowls.
  10. Working quickly as the peppermint sugar will begin to stick when exposed to humidity, roll the cookies through the powdered sugar first and then into the peppermint sugar.
  11. Set aside or serve.
  1. If peppermint sugar begins to stick, keep a small whisk handy and simple keep it broken up. Do not grind it too soon before use.
