Decadent Deep Chocolate Brownies

Truly decadent brownies with a touch of almond extract to give them a special flare.

  • 1¾ cups flour
  • ¾ cups unsalted butter (1½ sticks)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 cups good quality chocolate; (Ghirardelli chocolate chips at a minimum)
  • ¾ teaspoon salt
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 6 eggs
  1. Preheat oven to 325 degrees.
  2. In a three quart pan, melt butter and chocolate on low heat.
  3. Remove from heat and add both sugars, stirring until incorporated and slightly cooled.
  4. Add eggs, one at a time, mixing completely between each addition.
  5. Add vanilla and almond extract.
  6. In a separate small bowl, combine four and salt. Add flour to chocolate mixture and stir well.
  7. Butter a 9x13 pan and spread batter evenly throughout pan.
  8. Bake for 50-60 minutes depending on oven and altitude until knife or toothpick inserted through the center comes out slightly moist but not runny or sticky.
  9. Cool and serve.
To modify the intensity of the chocolate to your taste try using all 60% cacao chips for richer brownies; milk chocolate for sweeter brownies; semi-sweet or a mixture of two or more.
