All American Belgium Waffles

Simply perfect Belgium waffles.

  • 1 cup All purpose flour
  • ¾ cup Cake flour
  • 2½ teaspoons Baking powder
  • ½ teaspoon Baking soda
  • ¾ teaspoon Salt
  • ¼ cup Sugar
  • 1¼ cup Warm water
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • ¼ cup (1/2 stick) Unsalted butter, melted
  1. Combine flours, baking powder, baking soda, sugar and salt in a large bowl and stir together.
  2. Add water, egg yolks, butter & extract, whisk until batter is smooth.
  3. Beat egg whites in a separate bowl until stiff peaks form.
  4. Fold egg white into batter in two separate divisions until mixture is smooth and free of lumps.
  5. Cook on lowest setting of waffle iron or until golden brown.
Cook up the entire batch and allow waffles to dry on a plate. Freeze all left over waffles for later. To reheat frozen waffles, toast on low.
