This Caribbean and Latin inspired dish is quick and delicious.

  • 3-4 Ripe plantains
  • Canola oil for frying
  • Brown or white sugar for coating
  1. Add approximately ¼-1/3rd of an inch of oil to a pan and heat to 360 degrees.
  2. Peel plantains and slice on a biased angle about ⅓rd inch thick.
  3. Roll slices in sugar, coating lightly.
  4. Fry plantains for 60 to 90 seconds on each side.
  5. Remove from pan & serve.
Freeze leftovers. When ready to reheat, bake in oven or toaster oven on 350 for 7-10 minutes.
