Ingredients
  • 2-3 Tortillas (depending on overall size of baking pans)
  • 4 eggs
  • 8 strips of bacon
  • Veggies of choice, sliced
Instructions
  1. Cook bacon on medium low heat thoroughly, just before the crispy stage. Remove from pan & set aside.
  2. While bacon is cooking, cut tortillas into circles approximately ½ to 1 inch larger than the diameter of the pan being used. (individual tart shells, muffin tins or ramekins are best).
  3. Place tortilla circles in hot bacon grease and cook about 20 seconds on each side.
  4. Fit tortillas to sides of pans to create bowls or shell shapes.
  5. Layer bacon and veggies inside shells.
  6. Top with uncooked egg.
  7. Bake in 350 degree oven or toaster oven for 25-30 minutes.
  8. Serve
