Quick And Easy Green Chili Enchiladas

Quick and easy enchiladas; Frontera southwest sauces make this delicious and keep it all natural.

  • 6 large tortillas
  • 1 pound ground chuck
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can Goya black beans
  • 1 small can green chilis
  • 1½ cup cooked rice
  • 1 cup taco seasoning sauce ( or prepackaged or homemade)
  • 2 cups prepared green chili enchilada sauce (Frontera all natural preferred)
  • 2 cups colby jack cheese, shredded
  1. Heat oven to 350
  2. In a medium skillet, cook meat with half of taco sauce until medium well done.
  3. Add pepper, onion, beans, and green chiles. Stir in remaining taco sauce and cook 5-7 minutes.
  4. Stir in rice.
  5. Spoon mixture into tortillas lengthwise and roll.
  6. Place in 9x9 inch baking pan.
  7. Pour enchilada sauce over everything and top with cheese.
  8. Bake for 25 minutes. Serve.
