Creamy risotto with French cheese and zucchini.

Ingredients
  • 1 cup Risotto rice, uncooked
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • ½ cup Onion, chopped small
  • 2½ to 3 cups Chicken broth
  • ½ cup Gouda cheese
  • ½ cup Gruyere cheese
  • ½ cup Zucchini, shredded
  • Salt
  • Pepper
  • ½ coriander
Instructions
  1. In a medium pot, melt butter and oil on medium heat for 3-4 minutes.
  2. Add risotto and cook, stirring constantly, until rice begins to turn golden; about 2 minutes.
  3. Stir in broth ½ to ¾ cup at a time; stirring and allowing each increment to fully absorb between portions.
  4. Remove from heat and stir in zucchini, spices to taste and cheeses. Stir to incorporate.
  5. Serve.
